If you’ve never heard of it, a profiterole is the definition of sweet indulgence inside a dessert, consisting of just pastry balls, a filling, and a glaze of your choice.

While the name of profiteroles may not sound as familiar to you, you may know about the choux pastry a profiterole is typically made of. Beloved all over the world, this crispy dessert topped with ice cream is one to try at least once in your life.

Where are Profiteroles From?

Before even speaking of the history of profiteroles, we need to talk about the types of pastries that make up this dessert. In this case, a profiterole is made up of a choux pastry.

Choux pastry’s origin is unknown, though it has been shown to appear in recipe books in Europe as early as the 16th century.

The history of profiteroles themselves is more traceable. Profiteroles were developed by the Italian chef named Panterelli, who escorted Catherine de Medici when she came to the French royal court around 1530 to marry King Henry II. When de Medici came to France, she brought her Italian chefs and they made profiteroles for the royal court.

The word profiteroles mean a type of small reward or profit when a treat was offered as recompensation.

But they did not gain as much popularity as they now have until Marie-Antonin Carême, in the 19th century, filled his choux pastry with cream and dipped them in caramel.

Nowadays, the love for profiteroles has spread around the world. Choux pastry in particular has gotten used in other desserts like choux with cream or ice-cream, eclairs, Saint Honore, religieuses (double-choux nuns), croquembouches, and Paris-Brests. In the United States, profiteroles are also known as cream puffs.

Ingredients for Profiteroles

Luckily, the ingredients typically found in a profiterole are fairly easy to find and can be found in most pantries. The ingredients you will need for preparing profiterole desserts as a whole are included below.

For the Pastry

The following pastry is made with the choux pastry. Here are the ingredients that will make sure your pastry will puff up: 

  • Water
  • Butter
  • Salt
  • All-purpose flour
  • Eggs
  • Cinnamon
  • A scoop of your choice of ice cream (though vanilla is recommended)

For this dessert, just ice cream and a choux pastry are not enough.

For the Chocolate Sauce

No profiterole is complete unless it has a delicious chocolate sauce poured on the top. Here is how to make it.

  • Semisweet or dark chocolate
  • Heavy cream
  • Butter
  • Corn syrup
  • Cinnamon

Use these ingredients to make the perfect profiterole that will make your mouth water as soon as you see it on the table.

Preparing Profiterole Desserts

Here is how to prepare a typical profiterole.

  1. Preheat the oven at 220 C or 425 F
  2. Make the choux dough by combining water, butter, and salt and bringing it to a boil before reducing the heat and adding the flour
  3. Stir it vigorously with a wooden spoon.
  4. Cook until the dough is able to form into a ball while having a shiny sheen
  5. Transfer it to a mixing bowl in a hand-mixer and let cool for a few minutes
  6. Beat in eggs one at a time
  7. Add cinnamon
  8. Move it to a pastry bag equipped with a large straight tip
  9. Pipe one-inch inch balls onto a sheet tray lined with parchment paper
  10. Dip your finger in water and smooth out the top of each dough ball
  11. Bake for twenty to twenty-five minutes, rotating the tray halfway through
  12. When done, let cool on a rack
  13. Cut in half horizontally, fill with ice cream, and top with warmed chocolate sauce

To prepare the chocolate sauce, first put a saucepan with an inch of water on the stove and bring it to a boil. With the glass or metal bowl placed on top, you will make a bain-marie. Finally, add the chocolate and other ingredients and stir until everything gets combined together.
