There are two main styles of egg tart. There’s the Portuguese style, pastéis de nata, and the Chinese style, dan tat, both of which are delicious.

No one is exactly sure when egg tarts were first invented but it’s believed that it was at least over 300 years ago at the Jerónimos Monastery in Belém, Portugal, right outside Lisbon. 

At the time the nuns and monks of the monastery would use egg whites to starch their clothes when they did their laundry. This meant there was an overabundance of egg yolks that were left behind.

Not wanting to waste them, they incorporated the leftover egg yolks in their cooking, including their desserts. They experimented and perfected their egg tarts until the recipe was just right.

Eventually, when all the monasteries began to close down, they even sold the egg tarts as a means of raising money for themselves. Eventually, the recipe was sold to the owners of Fábrica de Pastéis de Belém. 

To this day this is still the most famous place in Lisbon to try egg tarts.
