Which usually signifies something quite boring, but that is not the case. You have so many options with a cheesecake, from delicious lime and tropical tastes to indulgent chocolate. If these were not reasons enough to create one, they are extremely easy to bake.
If you choose to bake it at all. The process can be made even easier by choosing a recipe that simply sets in the refrigerator. Quick, easy, and to everyone’s liking, it is the ultimate dessert.
Like any recipe, the better the ingredients, the better the meal. Get the best quality biscuits, cream cheese, and butter you can for a luscious finish to the cake.
Your first task is to get greasy. Take a 9 to 10-inch springform pan or large cake tin. It needs a good depth to it, whichever you choose.
Take some butter or cooking fat and grease the tin. Make sure you get in all of the edges and apply generously at the bottom.
The next step is to create a base for your easy no-bake cheesecake. Start by blitzing your biscuits in a blender. You want a coarse mixture, not too fine but not too thick either.
The choice of biscuit can have a huge impact on your cake. In the US, try to get graham crackers. For UK bakers, digestive biscuits offer a hearty, soft texture that is ideal.
In a pan, melt the butter slowly. Add this to the biscuit mix and stir until the butter is absorbed into the biscuits. You want a slightly sticky mixture that will adhere to itself once pressed flat.
You can also add sugar at this point, but judge it by the sweetness of the biscuit you have chosen for your no-bake cheesecake. If you have really sugary biscuits already, you won’t need to add much at all.
Once complete, place the biscuit mix in the bottom of your pan. Compact it tightly using a tool, such as the bottom of a glass tumbler. You need to make sure it is tough without any gaps or protruding ridge areas.
Now comes the hard work, unless, of course, you have an electric hand mixer. You need to begin beating the cream vigorously. You are looking to form stiff peaks from the cream itself.
When using a stand mixer, it will need to be on a medium speed to achieve this. You don’t want to over whisk and put too much air into the cream. Once done, you can set it aside.
Get another mixing bowl and begin combining the cream cheese, sugar, and lemon juice. You need to beat them on a medium speed for around two minutes. Aim for a smooth texture with no lumps or bumps to form the body of your easy no bake cheesecake recipe.
If you have grand plans for the cheesecake later down the line, the lemon here can be substituted for another fruit juice. For example, if you want to get tropical, then replace it with lime. Try to stick with acidic, citrus fruit juices to cut through the sweetness of the cake.
Next, you need to begin folding the whipped cream into the cheese mixture. Make sure you do this gently so you don’t destroy the texture you made with the cream. Fold all of the mix, including the bits that get stuck to the side.
Take out your biscuit mixture and spread the whipped cream and cheese mixture on top. Make sure it is evenly spread, compacting it with a spatula if you need to. Finish by rounding off the top to give it an even look, then place it in the refrigerator.
For a real treat, there are several ways to add some hidden surprises to your easy no bake cheesecake. They take very little extra preparation and don’t require a whole lot of ingredients.
An extra delicious treat can be added with your favorite candy bar. Get one or two of them, and place them in a ziplock bag with your chosen biscuits. Smash them up using a rolling pin, then carry on adding them to the butter and sugar as you would with the rest of the base mix.
If you are creating a cake for a children’s party, then you can build the layer of the cake up for a unicorn rainbow treat. Take your cheese and whipped cream mix and divide it into the number of layers you want to have. Add a different food coloring to each bowl, then layer them on top of one another, letting them set before adding the next.
This no bake cheesecake recipe is just the start. You can drizzle on caramel, sprinkle it with nuts, chocolate drops, and even a dash of fairy dust. Experiment and adapt to make your own unique version.
